This dish begins with premium beef tongue, slow-cooked sous vide for hours to achieve unmatched tenderness and depth of flavor. The result is melt-in-your-mouth meat with rich, savory notes that linger long after the last bite. Layered atop is a punchy Phat Kaphrao sauce, a bold blend of garlic, chili, and holy basil that pays homage to one of Thailand’s most beloved street food dishes — reimagined for the sky.

To add texture and a sense of elevated rusticity, we top the dish with crisp fried kale leaves and fried holy basil, creating a balance of crunch and umami that awakens the palate.
