THAI WAGYU KATSU SANDDO

Some dishes are comforting. Others are indulgent. At Sanctuary, we like to create food that’s both but with a twist that makes you pause after the first bite. Our Thai Wagyu Katsu Sanddo is exactly that.


We start with melt-in-your-mouth wagyu striploin, coated and fried just right for a crisp golden crust that gives way to juicy, tender beef inside. Instead of the usual plain spread, we add a punch of spicy peanut butter, giving the classic katsu sandwich a Thai personality that’s bold yet familiar. Soft brioche bread holds it all together, while pickled agsuta and pickled cucumber bring a refreshing brightness that balances the richness. Finally, a dusting of coriander ash ties everything together with a subtle, earthy depth. The result is a sandwich that feels playful but luxurious. It is the kind of dish you’d come back for, not just because it tastes good, but because it tells a story. It’s East meets West, comfort meets creativity, all in one perfect bite.
